Insanity Day 3--Plyo Cardio Resistance

Day 3 is in the bag! My knee aches all the time, except while I'm doing Insanity. Crazy, huh? I like this workout with all its squats and jumps and push ups. It kicks my ass but I like it.

Today's work out numbers:

I ate some bacon and eggs this morning. I made 4 eggs, expecting Sweets to eat a couple yolks (can't have the whites until she's a year), leaving me 2 eggs and 2 whites. She's a growing girl and ate 3 yolks. I'm glad she has such a great appetite and that she likes a variety of tastes and textures, but damn! Leave some for me! Lunch was leftovers from last night. Around mid-afternoon I so very hungry and had a big old salad, with grilled chicken and guacamole. Mmmmm, tasty! Tonight was supposed to be Asian pork lettuce wraps, but the chunks of meat I got out of the freezer were apparently chicken. We're having Asian chicken lettuce wraps instead!

I didn't include yesterday's workout numbers in the post, so here they are:

Insanity--Day 2, Plyo Cardio Circuit

I completed Day 2 of Insanity. Yesterday, when I told a friend that I'd taken the Fit Test, she asked if I was sore. I told her no and I didn't think I would be. Boy, was I wrong! My hamstrings were so tight this morning. The warm up and stretch in the plyo cardio video felt wonderful. I always feel like Shaun T's warm ups are too strenuous, but hey, I go with it! I am dealing with flexibility and balance, so the stretches are challenging for me. I hadn't done Insanity for awhile, so I didn't remember exactly what the circuits were, but they came back fairly fast. I know my quads and hammies will hurt like hell tomorrow. I'll need to use handicapped restrooms for the bar assist! No joke! I won't lie, I had to take frequent breaks throughout the video but I hope to improve each week.

Last night's pork chops were delicious. They were today's lunch, too. I also had a bacon and veggie omelet and coffee/Swiss Miss for breakfast. This afternoon, I was so hungry and forgot the banana in my bag, that I went to the convenience store in the building and got some chocolate. I'll try to do better in the future. Tonight's bacon Crock Pot roast, I'm told, smells devine. I can't wait to get home, kiss my Sweets, squeeze my man (oh, maybe he'll be in his apron ;)) and tear into the meat.

Insanity Day 1--Fit Test

Here we go again. I've decided to start Insanity again, with the goals of making it all the way through the program (mid-term) and to try to lose ten pounds in the next 30 days (short term). I eat really well, so this program and cutting alcohol (so long, Stella) should get me close.

I intended to do the fit test this morning before work, but Sweets decided she didn't want to sleep in, so she got up when I did, which meant I couldn't "just push play." I'm fortunate enough to work in a place that affords me the opportunity to get in a few workouts a week during the workday.

I had the Fit Test video queued up on my phone before heading to the gym, but once there, it wouldn't play. I did a little 5 minute warm up on my own then commenced the test. Here are additional data:

Although not ideal, I'm going to try to do Plyo Cardio Circuit tonight. I may just shift this week's schedule one day and not take Sunday off. We'll see.

Lunch: leftover salsa pork chops and 1/2 baked sweet potato

For tonight, the peach bar b que short ribs are in the Crock Pot and we'll have prosciutto wrapped asparagus with it.

What's on my mind.

Batman Zero Year #1 came out today. I bought it online, as I do with most of the comics I read. It is highly anticipated--a retelling of Batman's origin. The art was good with a lot of light as opposed to many Batman-related books which mostly occur in the dark, among the shadows. It was a good book, but I expected more. Maybe I expected more action, more Batman. What I got was a decent look at Bruce Wayne's return to Gotham after having been gone for years.

I've had a couple scary health issues pop up in recent weeks, but expect to get some resolution in the coming days.

We changed our diets a couple weeks ago to following a mostly-Paleo diet. I've found some great sites with wonderful recipes on them. The food is great, healthy, and prep time is comparable to the foods we'd prepare otherwise.

Huh, when I sit in front of my computer and think about things to blog, I can come up with at least 8-10 things. When I get to typing, I end up with only a couple short paragraphs. I guess that shows how mundane my life is!

Spaghetti a la Carbonara

1 T olive oil or unsalted butter
1/2 lb pancetta or thick cut bacon, diced
1-2 garlic cloves, minced
3-4 eggs
1 c grated parmesan or pecorino chees
1 lb spaghetti
S&P to taste

Put a large pot of salted water on to boil (1 Tbsp salt for every 2 quarts of water.)

While the water is coming to a boil, heat the olive oil in a large sauté pan over medium heat. Add the bacon or pancetta and cook slowly until crispy. Add the garlic (if using) and cook another minute, then turn off the heat and put the pancetta and garlic into a large bowl.

In a small bowl, beat the eggs and mix in about half of the cheese.

Once the water has reached a rolling boil, add the pasta, and cook, uncovered, at a rolling boil. When the pasta is al dente (still a little firm, not mushy), use tongs to move it to the bowl with the bacon and garlic. Move the pasta from the pot to the bowl quickly, as you want the pasta to be hot. It's the heat of the pasta that will heat the eggs sufficiently to create a creamy sauce. Toss everything to combine, then add the beaten eggs with cheese and toss quickly to combine once more. Add salt to taste.

Serve at once with the rest of the parmesan and freshly ground black pepper.
